Subject sums it up.
When I set up my plan, I didn't fill out that huge table where you can specify how much additional bandwidth, disk space, etc. costs
1) I assume if I did specify $/GB for additional traffic, the customer would be charged automatically. Is this true?
2) Considering that I don't have $/GB value specified, what will happen if my customer crosses the quota?

Correct, if you had anything in the monthly or extra cost column for bandwidth, it would charge that amount per GB . If you do not have anything in there and they go above that, then nothing happens to the account. However, you can set Settings --> Notifications --> User warnings --> Suspend account if traffic limit is exceeded as well as the percentage over the quota at which this will happen.
